- ½ cup dried elderberries
- 1 tbsp dried ginger root
- 1 cinnamon stick
- 3 cups water
- ½–1 cup honey
Method
- Add the elderberries, ginger, cinnamon and water to a saucepan.
- Simmer gently for 30–40 minutes, until reduced by approximately half.
- Strain and allow the liquid to cool until lukewarm.
- Stir in the honey and transfer to a clean jar.
- Store in the refrigerator.
Lemon Balm & Peppermint Infusion
