    Lavender & Lemon Scones

    Tender buttery scones delicately scented with Lavender and fresh lemon zest — a simple floral twist on an afternoon classic.
    Ingredients
    • 250 g self-raising flour
    • 50 g cold butter, cubed
    • 40 g caster sugar
    • 1 tsp dried Lavender Blossoms
    • Finely grated zest of 1 lemon
    • 150 ml milk
    • 1 egg, beaten, for brushing
    • Cream and lemon curd, for serving
    Method
    Preheat the oven to 200°C. Rub the butter into the flour until the mixture resembles fine breadcrumbs. Stir through the sugar, Lavender Blossoms and lemon zest. Gradually add the milk and gently bring the mixture together into a soft dough. Pat to approximately 2–3 cm thick and cut into rounds. Place on a lined baking tray, brush lightly with beaten egg and bake for 12–15 minutes until risen and golden. Serve warm with cream and lemon curd.

    Lavender & Blueberry Preserve

    A beautifully simple floral syrup combining delicate Apple Flowers with warm vanilla, perfect for adding botanical character to drinks and desserts.
    Ingredients
    • 500 g blueberries
    • 300 g sugar
    • 1 tbsp lemon juice
    • 1 tsp dried Lavender Blossoms
    • 2 tbsp water
    Method
    Place the Lavender Blossoms in a small heatproof cup and add 2 tablespoons of freshly boiled water. Cover and steep for 5 minutes, then strain. Combine the blueberries, sugar, lemon juice and Lavender infusion in a saucepan. Cook gently until the sugar dissolves, then simmer for approximately 15–20 minutes, stirring regularly, until thickened. Spoon into a clean sterilised jar and allow to cool. Refrigerate after opening.

    Lavender Crème Brûlée

    A silky baked vanilla custard delicately infused with Lavender and finished beneath a crisp caramelised sugar crust.
    Ingredients
    • 400 ml cream
    • 1 tsp dried Lavender Blossoms
    • 1 tsp vanilla extract
    • 4 egg yolks
    • 50 g caster sugar
    • Extra caster sugar, for caramelising
    Method
    Gently warm the cream with the Lavender Blossoms until steaming but not boiling. Remove from the heat, cover and infuse for 10 minutes, then strain. Whisk the egg yolks and sugar gently until combined. Gradually whisk in the warm Lavender-infused cream and vanilla. Divide between ramekins and place them in a deep baking dish. Add hot water around the ramekins and bake at 150°C for approximately 30–35 minutes, until just set with a slight wobble in the centre. Chill completely. Before serving, sprinkle with a thin layer of caster sugar and caramelise until crisp and golden.

    Lavender, Honey & Almond Nougat

    A beautiful handmade confection combining floral Lavender, golden honey and toasted almonds in a soft, delicately aromatic nougat.
    Ingredients
    • 200 g caster sugar
    • 120 g honey
    • 60 ml water
    • 1 egg white
    • 150 g toasted almonds
    • 1 tsp dried Lavender Blossoms
    • Pinch of salt
    • Edible wafer paper, optional
    Method
    Line a small tin with baking paper or edible wafer paper. Combine the sugar, honey and water in a saucepan and heat gently until dissolved, then cook to a thick syrup. Whisk the egg white with the salt until soft peaks form. Carefully and gradually pour the hot syrup into the egg white while continuing to whisk. Continue beating until the mixture becomes thick and glossy. Fold through the toasted almonds and Lavender Blossoms. Press into the prepared tin and allow to cool and set completely before slicing into small pieces.
