There is no single way to enjoy a botanical pantry. Begin simply, follow your curiosity and allow the flowers themselves to become part of the ritual.
Few garden flowers possess quite the presence of a peony.
From tightly wrapped buds emerge extraordinary layers of petals, unfolding into generous blooms that can transform a garden for the brief period in which they flower. Their beauty may feel timeless, but the relationship between people and peonies has been developing for centuries.
Peonies belong to the genus Paeonia, the only genus in the family Paeoniaceae. The genus includes herbaceous perennials as well as woody shrubs, with species occurring naturally across parts of Europe, Asia and western North America.
China became particularly important in the story of the cultivated peony. Over centuries of selection and cultivation, peonies became deeply embedded in Chinese horticulture, art and culture. Tree peonies in particular acquired extraordinary cultural importance, while herbaceous peonies were also cultivated into an increasingly diverse collection of garden forms.
From Asia and Europe, peonies eventually travelled more widely through horticulture. Generations of gardeners and plant breeders continued selecting them for colour, fragrance, flower form and abundance, helping create the remarkable diversity of peonies grown today.
Yet beneath all of those cultivated forms lies the same captivating botanical transformation: a compact bud gradually opening into layer upon layer of delicate petals.
Drying those petals offers another way to experience the flower. Removed from the fleeting season of the garden, their texture becomes light and delicate while their colour and botanical character remain beautifully visible.
Our Peony Petals celebrate that quieter side of this spectacular flower — not as a large bloom commanding attention in the garden, but as an individual botanical that can be held, blended, steeped and explored.
For us, that is part of the magic of peony: a famously extravagant flower reduced to something wonderfully simple — a handful of delicate petals and the invitation to discover them differently.
A beautiful peony infusion begins with a small handful of delicate petals, hot water and a few quiet minutes for their floral character to unfold.
Watch the richly coloured petals soften and unfurl as they transform a simple cup of hot water into a delicate botanical infusion.
Add approximately 1–2 teaspoons of dried Peony Petals per cup to a teapot, clear glass mug or tea infuser.
Pour over one cup of freshly boiled water. Cover and steep for approximately 5–10 minutes, adjusting the time according to your preferred flavour and strength.
Strain the softened petals and enjoy the infusion warm, or allow it to cool completely before serving chilled or over ice.
Enjoy Peony Petals on their own or combine them with complementary flowers and herbs to create colourful botanical tea blends of your own.
Peony Petals are delicate, so begin with a light infusion and adjust according to your own taste. The natural colour of the petals and finished cup may vary from batch to batch, and the deep magenta petals should not be expected to produce an infusion identical in colour to the dried flower.
Finely crush the dried Peony Petals. Fold them through the softened butter with the honey until evenly distributed. Spoon onto baking paper, shape into a small log and refrigerate until firm. Slice as needed and serve with warm bread, scones or pancakes.
Cream the butter and sugar until smooth. Add the flour, crushed Peony Petals and lemon zest and mix until a soft dough forms. Chill for approximately 30 minutes, then roll and cut into biscuits. Bake at 170°C until lightly golden around the edges and allow to cool completely.
Place a small piece of Peony Petal and one or two berries into each compartment of an ice tray. Fill with water and freeze until completely solid. Add the finished cubes to sparkling water, lemonade or your favourite chilled botanical drink.
Finely chop the chocolate and place it in a bowl. Warm the cream until just steaming, pour it over the chocolate and leave for a minute before stirring until smooth. Stir in the butter and a little of the crushed Peony Petals. Chill until firm enough to shape, then roll into small truffles and finish with cocoa powder and a very light scattering of crushed petals.
