How to Prepare

Add 1–2 teaspoons of dried Calendula Blossoms to a cup or teapot. Pour over freshly boiled water, cover and allow to steep for 5–10 minutes.

Strain before serving.

    Measure

    Add 1–2 teaspoons of dried Calendula Blossoms per cup.

    Add Hot Water

    Pour freshly boiled water over the dried blossoms.

    Cover & Steep

    Cover the cup or teapot and allow to steep for 5–10 minutes.

    Strain & Enjoy

    Strain the blossoms before serving. Enjoy the infusion warm or allow it to cool for a refreshing floral drink.

    Ingredients
    • 2 tsp dried Calendula Blossoms
    • 500 ml freshly boiled water
    • ½ orange, thinly sliced
    • 1–2 tsp honey, optional
    • Ice
    • Fresh orange slices to serve
    Method
    Add the Calendula Blossoms to a teapot and pour over freshly boiled water. Cover and steep for 5–10 minutes, then strain. Stir in the honey while the infusion is still warm if desired. Allow to cool completely, add the orange slices and refrigerate until chilled. Serve over plenty of ice with fresh orange.

    A delicately golden botanical syrup with Calendula, vanilla and lemon for adding to sparkling water, iced tea or desserts.
    Ingredients
    • 2 tbsp dried Calendula Blossoms
    • 250 ml water
    • 200 g sugar
    • ½ vanilla pod or ½ tsp vanilla extract
    • 1 tsp fresh lemon juice
    Method
    Combine the Calendula Blossoms, water and vanilla in a small saucepan. Bring gently to a simmer and cook for approximately 5 minutes. Remove from the heat, cover and allow the blossoms to infuse for another 10 minutes. Strain, return the liquid to the saucepan and add the sugar. Warm gently until completely dissolved, then stir through the lemon juice. Allow to cool before transferring to a clean bottle and refrigerating.

    Ingredients
    • 150 g plain flour
    • 40 g finely grated Parmesan
    • 1 tbsp dried Calendula Blossoms
    • ½ tsp dried thyme
    • 50 g cold butter, cubed
    • 3–4 tbsp cold water
    • Pinch of black pepper
    Method
    Preheat the oven to 180°C and line a baking tray. Combine the flour, Parmesan, Calendula Blossoms, thyme and black pepper. Rub in the cold butter until the mixture resembles fine breadcrumbs. Add the cold water gradually until the mixture comes together into a firm dough. Roll thinly, cut into crackers and arrange on the prepared tray. Bake for approximately 12–15 minutes, or until crisp and lightly golden. Allow to cool before serving.
