Dried Peach Blossoms (Prunus persica) are the delicate flowers of the peach tree, recognised for their beautiful soft-pink petals and graceful appearance in early spring.

Traditionally explored as a floral botanical, the dried blossoms can be prepared as a delicate infusion often referred to as peach blossom tea. Their character is light, gently floral and subtly botanical, making them beautiful on their own or as part of carefully considered floral blends.

The peach tree has been cultivated for thousands of years and holds a particularly rich place in East Asian culture and botanical tradition. Its blossoms appear before the season's fruit, covering otherwise bare branches with shades of blush pink and rose.

How to Prepare

Add 1–2 teaspoons of dried Peach Blossoms to a cup or teapot.

Add Hot Water

Peach Blossom & Honey Butter

A softly floral whipped butter infused with Peach Blossoms and honey, beautiful spread over warm sourdough, scones or breakfast pastries.
Ingredients
  • 125 g unsalted butter, softened
  • 2 tsp dried Peach Blossoms
  • 1½ tbsp honey
  • ½ tsp vanilla extract
  • Small pinch of sea salt
Method
Finely crumble the Peach Blossoms. Whip the softened butter until light and creamy, then blend in the honey, vanilla, salt and Peach Blossoms. Spoon into a small serving dish and refrigerate until needed. Allow to soften slightly before serving.

Peach Blossom & Almond Financiers

Small French-style almond cakes with browned butter, delicate Peach Blossoms and crisp golden edges.
Ingredients
  • 100 g unsalted butter
  • 80 g ground almonds
  • 100 g icing sugar
  • 40 g plain flour
  • 3 egg whites
  • 2 tsp dried Peach Blossoms, finely crumbled
  • ½ tsp vanilla extract
  • Flaked almonds, for finishing
Method
Gently brown the butter in a saucepan and allow it to cool slightly. Combine the ground almonds, icing sugar and flour. Stir in the egg whites, vanilla and finely crumbled Peach Blossoms, then gradually mix in the browned butter. Spoon into small financier or muffin moulds, scatter with flaked almonds and bake at 180°C for approximately 12–15 minutes until golden.

Peach Blossom & Vanilla Syrup

A fragrant floral syrup for drizzling over fruit, yoghurt, pancakes, cakes or chilled botanical drinks.
Ingredients
  • 250 ml water
  • 200 g sugar
  • 2 tbsp dried Peach Blossoms
  • 1 tsp vanilla extract
  • 1 strip fresh lemon peel
Method
Combine the water, sugar and lemon peel in a small saucepan. Heat gently until the sugar dissolves. Add the Peach Blossoms and simmer very gently for 2 minutes. Remove from the heat, cover and infuse for 15 minutes. Strain, stir in the vanilla and allow to cool before transferring to a clean bottle. Refrigerate and use within one week.

Peach Blossom & White Chocolate Shortbread

Buttery shortbread with finely crumbled Peach Blossoms, vanilla and pieces of creamy white chocolate.
Ingredients
  • 150 g butter, softened
  • 75 g icing sugar
  • 200 g plain flour
  • 2 tsp dried Peach Blossoms, finely crumbled
  • ½ tsp vanilla extract
  • 60 g white chocolate, finely chopped
  • Pinch of salt
Method
Cream the butter and icing sugar until smooth. Mix in the vanilla, Peach Blossoms and salt, followed by the flour and white chocolate. Bring together into a soft dough and chill for 20 minutes. Roll gently, cut into biscuits and bake at 170°C for approximately 12–15 minutes, or until the edges are lightly golden. Cool completely before serving.
