Dried Mullein Flowers (Verbascum thapsus) are a distinctive traditional floral botanical, recognised for their small golden-yellow blossoms gathered from the tall flowering spikes of the Mullein plant.

Traditionally prepared as a herbal infusion, the dried flowers create what is commonly known as mullein flower tea — a mild botanical cup with a delicate, subtly sweet and gently floral character. They can be enjoyed on their own or combined with complementary flowers and herbs.

Mullein has a long history within European and traditional herbal practices. The plant is particularly recognisable for its tall flowering stalks, soft woolly leaves and clusters of bright yellow flowers that open gradually along the spike.

How to Prepare

Add 1–2 teaspoons of dried Mullein Flowers to a cup or teapot. Pour over freshly boiled water, cover and allow to steep for 5–10 minutes.

Strain thoroughly through a fine tea filter, fine-mesh strainer or cloth before drinking.

How to Brew Mullein Flower Tea

Measure the Flowers

Add 1–2 teaspoons of dried Mullein Flowers per cup to your teapot or infuser.

Add Hot Water

Pour over freshly boiled water, allowing the dried flowers to become fully immersed.

With their mild, gently floral character, Mullein Flowers can be explored beyond the teacup through delicate botanical infusions. From whipped honey butter to a rustic oat loaf, these recipes use the golden flowers as a subtle ingredient rather than an overpowering flavour.

Mullein Flower & Honey Butter

Soft whipped butter infused with golden Mullein Flowers and finished with honey — beautiful spread over warm bread, toast or freshly baked scones.
Ingredients
  • 125 g unsalted butter
  • 2 teaspoons dried Mullein Flowers
  • 1½ tablespoons honey
  • Pinch of sea salt
Method
Melt half of the butter very gently in a small saucepan. Add the Mullein Flowers, remove from the heat and allow to infuse for 15 minutes. Strain the infused butter very thoroughly through a fine filter or cloth, pressing gently to extract the butter while removing the fine plant material. Allow the strained butter to cool until soft but no longer liquid. Combine with the remaining softened butter, honey and a small pinch of sea salt. Whip until light and creamy. Spoon into a small serving dish and refrigerate until needed. Allow to soften slightly before serving.

Mullein Flower & Lemon Sugar

A fragrant botanical sugar combining finely prepared Mullein Flowers with bright lemon zest — ideal for baking or adding a delicate finishing touch to cakes and desserts.
Ingredients
  • 200 g caster sugar
  • 1 teaspoon dried Mullein Flowers
  • Finely grated zest of 1 unwaxed lemon
Method
Grind the flowers very finely using a spice grinder or mortar and pestle, then pass them through a very fine sieve to remove coarse plant material. Rub the lemon zest into the caster sugar with your fingertips until fragrant. Mix in a small amount of the finely sifted Mullein Flower powder until evenly distributed. Spread the sugar onto a tray and allow the lemon zest to dry completely before transferring to a clean airtight jar. Use to flavour shortbread, cakes and baking, or sprinkle lightly over baked fruit.

Mullein Flower, Honey & Oat Loaf

A rustic golden loaf made with a carefully strained Mullein Flower infusion, rolled oats and honey — simple, comforting and made for slicing alongside a pot of botanical tea.
Ingredients
  • 2 tablespoons dried Mullein Flowers
  • 250 ml freshly boiled water
  • 200 g plain flour
  • 80 g rolled oats, plus a little extra for the top
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • 2 eggs
  • 80 g honey
  • 60 g melted butter
  • 1 teaspoon vanilla extract
Method
Place the Mullein Flowers in a heatproof jug and pour over the freshly boiled water. Cover and steep for 10 minutes. Strain very thoroughly through a fine tea filter or cloth. Measure 180 ml of the finished infusion and allow it to cool. Combine the flour, oats, baking powder, cinnamon and salt in a bowl. In a separate bowl, whisk together the eggs, honey, melted butter, vanilla and cooled Mullein Flower infusion. Fold the wet ingredients gently into the dry ingredients until just combined. Spoon into a lined loaf tin, scatter a few rolled oats over the top and bake at 180°C for approximately 35–45 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool slightly before slicing.

Mullein Flower & Vanilla Custard

A silky pouring custard gently infused with Mullein Flowers and real vanilla — a subtle botanical accompaniment for baked fruit, puddings or simple cakes.
Ingredients
  • 400 ml full-cream milk
  • 2 teaspoons dried Mullein Flowers
  • 1 teaspoon vanilla extract or ½ vanilla pod
  • 4 egg yolks
  • 50 g caster sugar
  • 1 teaspoon cornflour
Method
Place the milk, Mullein Flowers and vanilla in a saucepan and warm gently until steaming but not boiling. Remove from the heat, cover and allow to infuse for 10 minutes. Strain the milk very thoroughly through a fine filter or cloth to remove all flower particles. Whisk the egg yolks, sugar and cornflour together until smooth. Slowly pour the warm strained milk into the egg mixture while whisking continuously. Return everything to the saucepan and cook over low heat, stirring constantly, until the custard thickens enough to lightly coat the back of a spoon. Do not allow it to boil. Serve warm or chill for later use.
