Ingredients

  • 200 g dark chocolate, chopped
  • 120 ml fresh cream
  • 2 teaspoons dried Orange Blossoms
  • 15 g butter
  • Cocoa powder, chopped pistachios or finely grated orange zest to finish

How to prepare

  1. Warm the cream with the dried Orange Blossoms without boiling.
  2. Remove from heat, cover and infuse for 10 minutes, then strain the blossoms.
  3. Gently reheat the infused cream and pour it over the chopped dark chocolate. Rest for 2 minutes.
  4. Stir slowly until smooth, adding the butter as the mixture becomes glossy.
  5. Refrigerate until firm enough to shape.
  6. Form into small truffles and finish with cocoa powder, finely chopped pistachios or finely grated orange zest.

Kitchen notes

Contains milk/dairy from cream and butter; pistachio topping adds tree nuts. Check chocolate packaging for other allergens including soy or nuts. Use correctly identified food-grade dried Orange Blossoms (Citrus aurantium as labelled on the ingredient product), not pesticide-treated ornamental blossoms. Fresh-cream confection should be refrigerated; the archived recipe gives no tested yield, shelf life or storage duration. No therapeutic claims are made.
