Kitchen notes

This recipe uses animal-derived gelatine and is not vegetarian or vegan. Honey is unsuitable for children under 12 months. Use the correctly identified botanical Snow Chrysanthemum (Coreopsis tinctoria, Asteraceae), not Chrysanthemum morifolium. The archived source specifies prepared infusion but does not provide its steeping ratio; use the actual product's directions rather than inventing one. The archive gives no tested jelly setting time, yield or storage duration. Since the dessert contains fresh pear, refrigerate and handle as perishable food. No medical claims are made.
