Ingredients

  • 1 medium red onion, thinly sliced
  • 1 tablespoon dried Hibiscus Flowers
  • 120 ml apple cider vinegar
  • 120 ml water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon black peppercorns

How to prepare

  1. Place the thinly sliced red onion in a clean, heatproof jar.
  2. Combine the dried Hibiscus Flowers, apple cider vinegar, water, sugar, salt and black peppercorns in a small saucepan.
  3. Bring gently to a simmer and stir until sugar and salt have dissolved.
  4. Remove from the heat and allow the Hibiscus to infuse for 5 minutes.
  5. Strain the hot liquid over the onions, ensuring they remain submerged.
  6. Allow to cool safely, then refrigerate promptly. Leave for several hours before serving for colour and flavour to develop.

Kitchen notes

This is a refrigerator quick-pickle, not a shelf-stable, canned or validated preservation recipe. The acidity and process have not been tested for ambient storage, and the original source specifies no validated shelf life. Use clean jars, food-grade Hibiscus (Hibiscus rosa-sinensis as identified on the product) and appropriate hygiene; keep chilled. Avoid botanicals to which you are sensitive. No health or medicinal claims are made.
