Ingredients

  • ½ cup food-grade dried elderberries (Sambucus nigra)
  • 1 tablespoon dried Ginger Root (Zingiber officinale)
  • 1 Ceylon Cinnamon Stick (Cinnamomum verum)
  • 3 cups water
  • ½–1 cup honey, to taste

How to prepare

  1. Confirm that the elderberries are properly identified food-grade berries without leaves, stems or unripe fruit.
  2. Combine elderberries, dried ginger, cinnamon and water in a saucepan.
  3. Bring to a full boil and boil for at least 10 minutes, then gently simmer until the elderberries are thoroughly cooked, approximately 30–40 minutes in total.
  4. Strain carefully, removing all berry solids, ginger and cinnamon.
  5. Cool the strained liquid until lukewarm, stir in the honey and transfer to a clean food-safe jar.
  6. Refrigerate promptly and enjoy only as a culinary syrup.
