Known botanically as Gomphrena globosa, the plant has a long history as both an ornamental flower and a botanical used in traditional tea preparations. Its papery petals naturally hold their shape and colour remarkably well when dried.
When steeped, Globe Amaranth Flowers create a delicate botanical infusion with a mild, gentle character. Their striking appearance also makes them a beautiful addition to loose-leaf tea blends, floral infusions and decorative botanical creations.

Globe Amaranth creates a delicate floral infusion with a mild, gently earthy and subtly herbaceous character. A simple covered steep allows the whole dried flower heads to gradually release their colour and botanical character into the water.

Add 3–5 dried Globe Amaranth Flowers per cup.
Pour freshly boiled water over the whole dried flowers.
Cover and allow to steep for 5–10 minutes as the flowers gradually infuse the water.
Strain before serving and enjoy the floral infusion warm, or allow it to cool for a refreshing botanical drink.
Globe Amaranth has a mild, gently earthy and subtly floral character. Enjoy it on its own or combine it with complementary botanicals such as Blue Butterfly Pea, Chamomile or Rose according to taste.
Steep the Globe Amaranth Flowers in freshly boiled water for 5–10 minutes, then strain. Stir in honey while warm if desired. Allow to cool completely, add the strawberries and lime, and refrigerate until chilled. Serve over ice.
Add the Globe Amaranth, Rose Petals and water to a small saucepan. Simmer gently for 5–8 minutes, remove from the heat and allow to infuse briefly. Strain, return the liquid to the saucepan and add the sugar. Stir over low heat until dissolved, then add the lemon juice. Cool completely before bottling.
Steep the Globe Amaranth Flowers for 5–10 minutes and strain. Sweeten lightly while warm if desired, then allow to cool. Gently crush a few raspberries in the bottom of a glass, add ice and lemon slices, then pour over the chilled infusion. Finish with the remaining raspberries.
Cream the butter and sugar until smooth, then mix in the vanilla and flour to form a soft dough. Gently fold in a small amount of Globe Amaranth petals. Shape or cut into biscuits and bake at 170°C for 12–15 minutes, or until lightly golden at the edges. Cool completely, drizzle with melted white chocolate and finish with a few additional petals.
