How to Prepare

Add 1–2 teaspoons of dried Pink Rose Petals to a cup or teapot.

Pour over freshly boiled water, cover and allow to steep for 5–10 minutes.

    Measure

    Add 1–2 teaspoons of dried Pink Rose Petals per cup to your teapot, infuser or tea filter.

    Steep

    Pour over one cup of freshly boiled water. Cover and steep for approximately 5–10 minutes, adjusting the time according to your preferred floral strength.

    Rose Petal & Pistachio Turkish Delight

    Soft, jewel-like Turkish delight delicately flavoured with rose and finished with pistachios and dried Pink Rose Petals.
    Ingredients
    • 180 ml water
    • 45 g cornflour
    • ½ tsp cream of tartar
    • 250 ml additional water
    • 1–2 tsp finely crumbled dried Pink Rose Petals
    • 1 tsp rose water
    • 40 g pistachios, roughly chopped
    • Icing sugar and cornflour, for dusting

    Method

    Heat the sugar and 180 ml water gently until dissolved, then simmer to form a clear syrup. In a separate saucepan, whisk the cornflour and cream of tartar into the remaining water and cook until thickened. Gradually whisk in the hot sugar syrup and cook gently until very thick and glossy. Stir through the rose water, Pink Rose Petals and pistachios. Pour into a lined dish, leave to set completely, then cut into cubes and dust generously with a mixture of icing sugar and cornflour.

    Ingredients
    • 300 g fresh or frozen raspberries
    • 200 g jam sugar
    • 1 tbsp lemon juice
    • 1 tbsp dried Pink Rose Petals, lightly crumbled
    • ½ tsp vanilla extract



    Method

    Place the raspberries, sugar and lemon juice in a saucepan and heat gently until the fruit releases its juices. Bring to a steady boil and cook until the preserve reaches setting point. Remove from the heat, stir through the Pink Rose Petals and vanilla, then spoon into a clean sterilised jar and seal.

    • 250 g good-quality white chocolate
    • 30 g pistachios, roughly chopped

    Method

    Melt the white chocolate gently and spread it onto a parchment-lined tray. Scatter immediately with pistachios, Pink Rose Petals and a very small pinch of sea salt. Allow to set completely before breaking into irregular pieces.

    • 150 g unsalted butter, softened
    • 75 g icing sugar
    • 200 g plain flour
    • 1½ tsp dried Pink Rose Petals, finely crumbled
    • ½ tsp ground cardamom
    • ½ tsp vanilla extract

    Method

    Cream the butter and icing sugar until smooth. Mix in the vanilla, cardamom, Pink Rose Petals and salt, then gently incorporate the flour to form a soft dough.
