How to Brew Blue Butterfly Pea Flower Tea

Steep 1–2 tsp dried flowers in 250 ml freshly boiled water for 5–10 minutes. Strain, cool and pour over ice. Add honey if desired, followed by fresh lemon juice. Watch the blue infusion shift towards violet or purple.
WHY DOES IT CHANGE COLOUR?
Butterfly pea flowers contain anthocyanin pigments that respond to acidity. Adding lemon changes the pH, shifting the infusion from blue towards violet or purple.
